Yield: 4 pancakes
2 oz cream cheese
2 eggs
butter for the pan
½ tsp cinnamon (optional)
1 tsp sugar substitute (optional)
Mix all ingredients until smooth. Heat pan on medium and grease with butter when hot. Pour 1/4 of the batter into the pan and cook until golden on one side, then flip and repeat.
